Rum Balls Holiday Treat

With all the shopping, wrapping, and decorating who really has the time to bake? If you’re anything like me you are definitely trying to beat the clock, and don’t really have much time left over for measuring out tons of ingredients, or waiting for the baking and cooling process to be done. No need to worry I have the perfect no bake, no wait cookie recipe for you all, and it fits right in with a holiday feel!
This is actually one of my favorite desserts and for times like these, rum balls are the go to cookie. I originally got this recipe from a friend, who without fail brings these delicious treats to me every year for Christmas (she knows I love them). Surely, I was surprised to find out how simple they are to make and decided to give them a shot. It’s a quick, easy, fun adult dessert, and perfect for the holiday season. Not to mention, there is only FIVE simple ingredients and absolutely no bake time what so ever! These decadent cookies are also great for an extra touch to your dessert table or those last minute gifts we “sometimes” forget.
Here is what it takes…
Yields: 15-18 balls
Using a food processor (check KitchenAid KFP0711CU 7 Cup Food Processor, Contour Silver) take the nilla wafers and turn the cookies into literal crumbs, and then repeat the same process for the walnuts. Once measured to correct amount, combine all ingredients in your mixer(KitchenAid KSM150PSER Artisan Tilt-Head Stand Mixer with Pouring Shield, 5-Quart, Empire Red). Keep in mind when adding the rum (I use Bacardi Gold), add in the 2 tbsps first, if you would like a stronger taste, add in a little more (I usually do 2 ½ tbsps). Mix in at a medium to high speed for a couple of minutes or until it reaches a doughy consistency
Next, roll the dough into balls (about an inch in size), and then roll the balls into the confectioner’s sugar until fully coated. Voila! All done, no bake time necessary! If you would like, you can also garnish with a little more sugar sprinkled over the top, some mint, and cranberries for a more decadent appeal. Enjoy!
