1 stick butter melted
3-ounce package cream cheese
1 teaspoon vanilla extract
1/2 cup finely chop pecans
1 tablespoon granulated sugar
1 bag of frozen cherries or strawberries
1 can of cherry or strawberry jam
1 teaspoon of almond extract
1 1/3 cups of all-purpose flour
Preheat oven to 350 degrees and defrost frozen strawberries or cherries. When the fruit is defrosted, mix whichever fruit you have selected with the jam, making a paste. Set aside.
Mix in a large mixing bowl butter, cream cheese, and sugar. Beat it until smooth (about 4 minutes with electric mixer) Add to the mix flour and pecans and mix well. Add the vanilla extract and continue mixing, you will get a smooth dough to create the little nests.
Roll dough into 1 inch balls, press firmly and evenly onto the bottom and up the side of miniature muffin cups to create a nest.
Combine the fruit paste and almond extract. Spoon about 1 tablespoon of the mixture into each pastry-lined cup. Bake in the oven for about 20-25 minutes, until light brown. Let it cool on a wire rack completely.
