Avocado gazpacho healthy soup

This recipe of avocado gazpacho is a variation of a favorite Spanish dish consisting of raw vegetables and served chilled. 1 medium avocado (ripe) diced

4 to 5 fresh mint leaves

1 -2 cucumber diced

half lemon -half lime

half onion diced (optional)

1 garlic head diced (optional)

salt to taste

pepper to taste

1-2 cups of water ( more for liquid, less for creamier)

Add all ingredients into a blender or food processor and mix together until it becomes smooth and all ingredients are combined and liquefied into a creamy mix. Refrigerate for a couple of hours and serve cold. That's all! Enjoy this delicious, good for you soup!
