Chocolate Peppermint Cupcakes Recipe

The holiday season is here again, which means holy, cheer, and yes…sweets!! When we think of Christmas sweets there are a few goodies that definitely come to mind: Cocoa, gingerbread, and of course candy canes. This decadent peppermint flavor is the perfect touch to any holiday dessert, adding taste and color to your dish.
Ok so enough talk about candy canes and let’s get to this tasty recipe! This semi-sweet, minty frosting is the perfect balance to the rich chocolaty cake, and its going to make for a great dessert to serve your guest this Christmas.
Yields: 12-18 cupcakes
1 Cup brown sugar
6 tablespoons butter, softened
1 ¼ cups all-purpose flour
½ cup unsweetened cocoa
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup low-fat buttermilk
1 teaspoon vanilla extract
4 cups powder sugar
8 ounces light cream cheese
¼ teaspoon peppermint extract
18 candy canes, crushed
First make the cupcakes: In a separate bowl from the mixer combine flour, cocoa, baking powder, baking soda, and salt; stir well and set aside. In the mixing bowl place brown sugar and butter; beat at medium speed for 1-2 minutes or until mixed in well. Add eggs, 1 at a time and mix in after each one is added. Take your flour mixture and slowly add to sugar alternating the buttermilk (start and end this step with the flour mixture). Lastly, stir in vanilla extract.
Preheat oven to 350
While oven is preheating take your cupcake pan, place the liners, and evenly fill in with batter. Bake at 350 for about 15 minutes, or until cupcakes are fully baked.
*Tip: to check if cupcakes are done stick a butter knife in one of them, if it comes out clean they are done, but if you see uncooked batter they need a little more time.
When fully baked, remove from oven and leave in pan for 10 minutes or so to cool off a bit before moving onto cooling racks to cool completely.
In the meantime, prepare the peppermint frosting. Again, using the mixing bowl combine powdered sugar, cream cheese, and peppermint extract; mix until smooth. Next, set aside frosting; take the unwrapped candy canes, place in a Ziploc bag, and with a rolling pin crush the candies finely, leaving a few big pieces for a festive look!
Now, your cupcakes should be completely cooled; fill the piping bag with the frosting and begin decorating. Once you have frosted the cupcakes garnish with the crushed candy canes. Enjoy!
