Lemon ginger fish fillet
This lemon ginger fish fillet is a great, easy and healthy recipe for busy families with little time to cook. Between preparation and cooking time the dish is ready in 30 minutes. Add this recipe to your weekly dinner planner for variation. It is a winner!
Prep time: 10 minutes Bake: 20 minutes Servings: About 4
1 pound frozen fish – Cod, Haddock, or any other you enjoy
2 tablespoons of butter
1 tablespoon lemon juice
One onion cut in rings
1/8 teaspoon pepper
One tablespoon minced fresh parsley
1 clove garlic minced
1/3 cup natural orange juice
One teaspoon minced ginger
Preheat oven to 375. Coat a baking dish with cooking spray and place fish fillets. Sprinkle with parsley and pepper. Set aside.
Prepare the sauce: In a small skillet, saute onion and garlic in butter until soft. Add lemon juice, minced ginger and orange juice to the mix and then coat the fish with the sauce.
Place in the oven and bake, uncovered for about 20 minutes or until fish flakes easily
Prepare the dish and serve with a side of couscous, pasta or rice. You can also add the vegetables (potatoes and zuchinni) as we did ours or check this recipe for roasted vegetables. Lemon ginger fish fillet is better to enjoy with a semi-dry white wine. Delicious!
