Light, delicious chicken recipe
Servings: 3 to 4 - Calories: about 350 total - Cooking time: 30 minutes
I medium clove garlic minced
All purpose condiment (Badia is our favorite)
1 teaspoon coconut oil
4 leaves of Perejil finely chopped
1 teaspoon of sesame oil
1 1/2 cup of corn (frozen or can is as good)
Salt and Pepper
1 teaspoon rice vinegar
3-4 Boneless Chicken Breasts thin sliced
1 cup of natural fresh squeezed orange juice (if you use other than fresh, add the calories of the added sugar - check the label)
Condiment the chicken breasts with the Badia or All Purpose seasoning of choice and set aside.
In a medium size, pan add the coconut oil, Sesame seed oil, and heat over medium heat. Add garlic and Perejil, simmering a few minutes. Proceed to add the chicken side by side. Cook on medium heat, turning over for even cooking. Add the rice vinegar, oregano and salt to taste and pepper to taste (this is optional, and you can reduce if the seasoning, all- purpose condiment has enough of both. Continue simmering for a few minutes.
Add the corn evenly coating the chicken. Proceed to add the orange juice, covering all the chicken. Let it simmer until cooked thoroughly - about 10-15 minutes more. Serve with white Basmati, Jazmin rice and add a side vegetable if desired - we did Brussels sprouts this time, but you can add any side vegetable to this light, delicious chicken recipe!
