Nutty hot coconut shrimp
A bit spicy, kind of sweet and very nutty shrimp
Cooking time: 20 minutes Servings: About 4
Nutty hot coconut shrimp, an easy, delicious and spicy treat to try tonight for dinner!
1/4 cup roasted lightly salted almonds chopped
2 teaspoons sesame seed oil - dark is better for this recipe
1/2 teaspoon red pepper flakes
2 tablespoons chopped cilantro
1/2 tablespoon chopped parsley
one pound large raw shrimp, peeled, deveined
1/4 cup shredded coconut
one lemon for juice
1/2 tablespoon chopped mint
In a small non-stick skillet put a bit of butter or Pam spray oil and toast the shredded coconut a few minutes, just until brown and put it aside.
Heat sesame seed oil in a large non-stick skillet over medium heat. Add the shrimp and red pepper flakes, stir for a few minutes until shrimp are pink.
Add cilantro, parsley and mint tossing well.
Serve in equal portions on dinner plates and top with the shredded coconut and almonds. Spritz lemon juice and serve.
Serve with sugar snap peas or broccoli. This dish could be paired correctly with high-quality white rice, like Basmati, Jazmine as well as couscous. It makes for a great lunch gathering or light dinner menu.
This dish might be a great addition as an appetizer for a big party. Increase amounts according to the number of guests. It is also a great hors d'oeuvre to pass around.
