Oriental Noodle Salad
Servings: 4 side dishes, increase portions of chicken and noodles for a main dish
Calories: 300 Prep time: 20 minutes
1/3 cup peanut butter
1/3 cup honey dijon mustard
1/2 cup chicken broth
2 tablespoons teriyaki sauce
cayenne pepper sauce to taste*
2 cups of finely diced vegetables:
green bell peppers
red bell peppers
2 cups of oriental noodles cooked according to instructions and drained
2 cups of diced cooked chicken (you can use the prepared option like Perdue short cuts chicken (frozen, cooked and ready to use, just need to warm up)
Combine dressing ingredients: honey dijon mustard, chicken broth, peanut butter, teriyaki sauce and cayenne pepper sauce* in bowl and blend well.
Add vegetables and meat to sauce and blend. Add oriental noodles, toss to coat the pasta. Serve promptly.
This simple dish serve as a main dish when adding chicken is great as part of a sensible diet. You can also substitute the chicken for tofu for those following a vegetarian diet.
You can serve this dish without the chicken or tofu as a side salad dish. Truly delicious combined with a main dish.
