Snappy Shrimp Delight

It's hot, delicious and really snappy

Snappy Shrimp delight for the lovers of spicy seafood, this is paradise! Serve with angel hair pasta or white rice, makes a great dinner for the family not to mention a friends gathering

 

Servings:  About 4            Prep and cook time: 20-25 minutes 10 additional if preparing scampi sauce

Ingredients:

(Increased portions for more servings)

12 oz peeled deveined shrimp

1 lemon for juice

8 ounces of angel hair pasta/ rice (your choice)

½  cup scampi sauce

4 slices of bacon

1 cup sweet tomatoes, finely diced

2 teaspoons garlic minced

1 tablespoon Italian parsley, finely chopped

¾ white cooking wine

2 tablespoons of Cajun seasoning

½ teaspoon red pepper crushed

Instructions:

Cut bacon into bite-sized pieces and cook in a large saute pan on medium high until bacon is almost done. Cook pasta or rice according to package instructions and set aside while cooking shrimp.

 

Add shrimp to bacon and sprinkle the Cajun seasoning, cook for a minute. Stir in tomatoes, wine, garlic, and crushed pepper. Cook for 2-3 minutes, just until shrimp are pink and opaque. Shrimp cook quickly, keep an eye on it!

 

Stir in Scampi sauce and lemon juice. Top with parsley and serve over rice or pasta.

Serve this dish with a side dish of garden salad, and white wine (semi-sweet)

Scampi sauce:

You can buy scampi sauce, or you can make your own, which is relatively easy. Here is a recipe you can certainly make at the same time that you prepare the shrimp recipe.  Just add it to your dish as instructed above.

 

One tablespoon olive oil

Two tablespoons garlic finely minced

1 ½ cups white wine – Chardonnay is excellent

One half fresh lemon – squeeze the juice

1 teaspoon Italian seasoning

Half a cup softened butter

1 tablespoon parsley

Half a cup grated parmesan cheese

Instructions:

In a medium size pan, add the olive oil and heat to medium, stir in garlic, white wine, and lemon juice. Do not brown garlic, keep stirring and remove when the wine has decreased to half. Add Italian seasoning. Reduce heat to low and add butter, taking care the pan is not too hot as it will separate. Add parmesan cheese and seasoned with salt and pepper to taste. Add to the recipe above, as indicated.
