Turmeric Chicken with broccoli
Easy and healthy recipe for the family
1 medium onion - diced
3 leaves fresh cilantro - cut small pieces
1 clove of garlic - minced
1/2 teaspoon oregano
1/2 teaspoon ground turmeric
salt (your taste)
pepper (your taste)
All purpose seasoning (We use Badia)
1 spoon Soy Sauce
1 spoon Teriyaki Sauce
2 teaspoons olive oil
Parmesan Cheese (optional)
2 1/2 cups of cut broccoli florets or 1 15 oz frozen broccoli
3 chicken breasts - skinless, boneless or diced chicken if you prefer
Cut chicken (if using breast chicken, instead of diced) in cubes and add salt, pepper and All purpose seasoning. Set aside.
In pan add 1 teaspoon olive oil, add cut chicken. Set to medium. Once cooked, set chicken aside.
Clean pan and in medium high, add the additional spoon of olive oil, onion, garlic, oregano, cilantro, add salt and pepper if you wish, simmer a few minutes. Add broccoli, simmer a few minutes and add Soy Sauce and Teriyaki Sauce. Let it blend. Add a bit of water if there is not enough liquid. Add chicken and turmeric. Set to low heat and let flavors blend. Sprinkle Parmesan Cheese if desired and serve with white rice.
Another choice is to serve it with Oriental Noodles or Quinoa.
