Minestrone Soup - An old favorite

Minestrone Soup is an amazing, good for you soup from the Italian kitchen. Through the years, it has been cooked in different ways, according to the traditions of each family. This recipe is one of those flavorful and "give me seconds" one. Perfect for a rainy day!

Serves 6-7

 

Ingredients

2 tbsp extra-virgin olive oil

4 cloves garlic, minced

1 large onion, diced

3 stalks of celery, diced

3 large carrots, diced

1 yellow squash, diced

1 zucchini squash, diced

4 oz of green beans, halved

2 tbsp fresh cilantro

Parsley (optional)

1 Hass Avocado (optional)

1 tsp dried oregano

1 tsp cumin

1 28 oz can diced tomatoes

1 14 oz can crushed tomatoes

6 cups vegetable broth

15 oz can kidney beans

15 oz can white beans

15 oz can chickpeas

1 ½ cups pasta of choice

 

Cooking Instructions

In a large pot, heat olive oil, add onions, garlic, celery, carrots, salt/pepper (to taste), oregano/cumin, and then saute for a couple minutes||Add cilantro and mix all together for a few minutes||Add diced & crushed tomatoes, then add vegetable broth and bring to a boil, then simmer for 15-20 minutes||Drain and rinse beans, then stir in and now simmer for 10 minutes||Stir in pasta and simmer for 10 minutes||stir in remaining vegetables continue simmer for another 10-15 minutes||Serve with avocado, fresh parsley, and French baguette (on side, optional).

 

If soup begins to become dry add in more vegetable broth. For our viewers who wish to have less sodium in their dishes, you can use low-sodium tomatoes and vegetable broth as a substitute. This soup is also a great way for small children to get a good serving of their daily vegetables, therefore a nutritious way to get them to eat!
